Biografia
Alessandro Aldrovandi: master pasta maker, he was born in 1967 and has over thirty years of experience in the art of making fresh pasta.
Yes, because making "fresh pasta" is an art. Becoming an expert in home-made fresh pasta (which in Italian we call “sfoglina” for women or “sfoglino” for men) requires patience, concentration, passion and humility.
It is not enough to follow a few rules, you have to learn the trade from those who know how to do it, nobody is born a “sfoglino” or “sfoglina” but anyone can become one.
He is owner of the workshop and sales outlet "La Casareccia", which since 1985 has been committed to producing fresh pasta in keeping with tradition but with an eye on innovation.
In the nineties, Alessandro started many collaborations in top-class gastronomic environments, both on the Italian and international territory (Israel, Germany, South Africa, Romania, Singapore, USA, Mexico, etc.).
In recent years he has decided to become a teacher, to ensure that the tradition of hand-made pasta is not lost but can be appreciated
